Roast em'

Yesterday I realized I had a TON of veggies that were on the verge of losing their freshness that I needed to take care of ASAP. When this happens I'll usually make some sort of soup or giant salad to use up all of my remainders. I hate wasting food, so I decided I'd make some oven roasted vegetables that would use up the rest of my veggie goods.
This is a great way to cook up a variety of veggies. It's SUPER easy, and kids like it too!
Preheat your oven to 400 degrees. 
Line  a cookie sheet with aluminum foil. (You don't have to do this, but it makes the clean up process a HECK of a lot easier!)
Spray the foil with non-stick cooking spray. 
Cut up your veggies.
My assortment included...broccoli, cauliflower, carrots, yellow squash, snow peas, yellow bell pepper, and my favorite, a sweet potato. I think the sweet potato makes the dish. Just saying. 
Drizzle the veggies in a bit of olive oil. Season with Garlic Salt and onion powder. Sprinkle with some brown sugar. The brown sugar adds a hint of sweetness that is SO tasty!
Bake uncovered in the oven for 45 minutes, or until veggies are tender.
There they are, in all their roasted glory. I ate these plain, but they would be great on rice, over a salad, or along side any meal. This recipe is a great way to get in several servings of vegetables at once!

Do you hate wasting produce like I do? I can almost always seem to come up with a way of making things last or combine, so as not to waste them. Do you have any go to recipes for your excess produce?

  3. It never fails, I ALWAYS forget to spray the pan! So I end up with a massive mess when making anything!

    I hate wasting produce, but in the past week I've had TWO sweet potatoes go bad! I didn't even have them that long, and they usually last nearly forever, but they were moldy nastiness!

    And I LOVED the muffins! I'll definitely be making them again.

  4. I hate wasting produce. Nothing makes me more mad than finding a cucumber in the fridge that I paid for that is mushy. I've never roasted vegetables before but I can see that I need to do this!

  8. Roasting Veggies has got to be my favorite way of eating them, esp. in that "roast chicken" post i did, my GOD, veggies are good.

    although veggies are great when fresh, i think fruits are better when theyre a bit older, (even when not as pretty), the slightly "over ripe" process they go into, almost makes them taste like candy!

  9. I hate wasting any food. Roasting is a great way to use them up! We also like to make stir fry or soup. Or a huge massive salad. Yum...i'm hungry!!!

  13. OH I hate wasting produce. My BF thinks things have "gone bad" far before they actually have, so I have to snatch them up and cook them before the tosses them!

    You've inspired me to do some roasting tomorrow...er, today...to play defense for my veggies. OK I'm working nights and have no idea what day it is.

  14. Certain produce I cut up and freeze for use in soups, chilis, casseroles, etc. This works especially well with peppers, onions, zucchini, squash, etc. I wouldn't recommend eating them fresh later but they work great cooked.

  15. I cook some things right when I get them home to prevent waste. Like the mushrooms cooking down now. Yesterday, I got a great bargain on 10 - 8oz pkgs. of baby bellas. Once cooked and frozen, they'll be so easy to thaw and add to pizzas, soups and pastas.

    I hate wasting veggies (food in general), too. When I see them accumulating in the fridge, I usually make a super huge salad. I should try branching out and making soup next time.

  17. I do this all of the time. I HATE wasting food. You can also blend it with broth and a bit of milk for soup after you roast them. Top with cheese...so GOOD!

  18. ditto I hate wasting produce. So if i have a few left over bananas i make banana bread muffins or try to eat giant salads.

    Plus veggies and fruit are too good to allow to go to waste!
