One Ingredient Chicken, Roasted Veggies, and a Miracle on University Avenue

Today has been a crazy day. I'm still trying to pick up all the loose ends of life after being gone to Lake Powell. I hadn't gone grocery shopping in what seemed like weeks, and I had a million other little errands to run. That of course was all fit in around the working schedule which can make for a busy day!

While I was out running errands I went for my IPod to put in some tunes while I drove...cause I'm a sing-at-the-top-of-my-lungs-while-I-drive type a girl.  I couldn't find it anywhere...I of course, began to panic...that little juke box is my heart and soul. I don't know how to work out without it. I really don't. Sooo....flash back to last night when SB and I went to Yogurtland...I remember getting out of the car and hearing a dropping noise. I looked down and saw the cord to my Ipod hanging out the door and I figured it has just been caught on me as I was getting out. Then when I thought about it some more I realized that dropping noise I'd heard must have been my Ipod.

NO... So I searched some more, and couldn't find it, and decided finally I had to at least drive to Yogurtland to see if by some miracle it was still there in the parking lot.
I drove there, and lo and behold. GUESS WHAT WAS LYING IN THE PARKING LOT!?
IT WAS THERE! Can you even believe that? I almost can't. The bad news...it rained ALL night last night. Like...all night. So my poor lil' ipod is currently bathing in rice? Remember the computer incident? We'll see how this one goes. Me + Electronics + Water don't mix. 

Tonight I just wanted a good, healthy, home cooked meal. I bought a TON of fresh produce today, and I was so excited about it I wanted to eat all of it at once. Whenever I want lots of veggies at one time I use my go to Roasted Vegetable Recipe. It is amazing.
It makes eating veggies so easy. Try it. I decided I needed some good protein with it as well, so I whipped up the worlds easiest chicken.
 All you need is a box of Lipton's Dry Onion soup mix, which means that aside from the obvious chicken, you need all of one ingredient to whip this up. Easy peasy.
 
I heated my saucepan and coated the bottom with a little olive oil and a tad bit of water. I put in two frozen chicken breasts and then sprinkled the onion soup mix and some fresh ground pepper. I covered the chicken, flipped it once half-way through and sprinkled some more soup mix on the other side. That's it. So. Dang. Easy.

 This is a great easy and tasty meal that you can whip up in no time. I'm a fan.  Lots of veggies and some lean protein? Sounds like a meal to me!

  1. I CAN'T BELIEVE IT WAS STILL THERE....that is crazy!! That rice better soak the water out asap! Girl, I will be making that chicken. When can we go to yogurt land?

  3. Here's hoping your Ipod can be revived. If not, my hubs said he can get a good deal on a Zune ;)
    My problem with my Ipod is that I sweat like a man and it has started soaking into my armband holder thing. Now my Ipod shorts out.
    My go to easy meal is crock pot chicken salsa. Super easy and versatile.
    My hubs is salivating oer the roasted veggies and chicken so I guess I'll be trying that this weekend.

  6. That's so awesome that your iPod was still there! I MUST have my iPod at all times. I teach Zumba nearly everyday, so I always have it. If I can't find it in my purse I start to panic, even though it's usually just in the bottom underneath frozen yogurt receipts and my snack stash. :) Lately my easiest go-to meal has been crockpot balsamic chicken. Chicken, balsamic, onion, and crushed tomatoes. Easy and so so good!

    Oh, and your lake powell food sounded amazing! You are awesome!

  8. That is awesome! I was visiting Utah in March and went to Gold's Gym and left my ipod on one of the treadmills. I didn't notice for a couple of days and it was gone. Boo, isn't Utah supposed to be extra honest? But I have that same nano and I am always losing it, dropping it in water, once even got is stuck INSIDE of the treadmill! I hope yours can be revived!
