Redemption, Reviews, and Recipes.

Happy Monday! I hope your week has kicked off fabulously, and that your weekend was glorious and relaxing. Mine definitely was well needed and well appreciated. Now, back to the grind! I am super excited because my boot camp starts tomorrow. If you are still interested of have questions shoot me an email! It is going to be a fantastic calorie burning sweat fest!!

The fabulous people over at Bob's Red Mill sent me some products to review, and I have been quite excited about trying them.  I received organic whole wheat flour, steel cut oats, quinoa, and whey protein. You may remember the steel cut oats and the whey protein from the breakfast fail. Yikes. Still kinda makes me gag again. Not Bob's fault...definitely my own.
 
And so this weekend it was time for a redemption. Steel cut outs round #2, but this time with a recipe, and a little more knowledge on the situation. I got out my bag of steel cut oats and set it on the counter and turned around to grab some other goods out of the pantry when i heard what sounded like an avalanche of sand...SERIOUSLY??? This is what I turned around to find...somebody in this world wants me to HATE steel cut oats.
 Yep, the WHOLE bag poured on the floor. :(
- I HATE wasting food.
- I am also a weird cooking germ-a-phobe
These two qualities don't make for the best combination. I scraped the top oats off the pile. The ones not touching the floor, and salvaged what I could, then threw the rest away. I felt like Rachel. (I LOVE Friends, btw)
Luckily I saved enough to try out my recipe. I put this combo into the crock pot before I went to bed on Saturday night, and set them on low, so they could cook all night.
And when I woke up on Sunday...VOILA! The different recipes I looked at suggested you add butter, dried fruit, chopped apples, brown sugar, etc. I learned my lesson about too much experimenting last time, so I decided just to try the oats this time. They turned out GREAT! Very creamy, and delicious.
The amount I cooked made 4 servings, so I divided the others up for breakfast this week. I'll let you know how they reheat. Don't judge the ghetto tupperware.
I added some peanut butter, chopped up bananas, and cinnamon. It was very tasty. I think this may be a great way to save some time in the morning if needed. I am excited to see how the re-heating of the oats goes, and I will definitely let you know.
I also wanted to try a recipe that I've had for a while using quinoa. I've never made it before, so I had no idea what to expect! I know with some quinoa you buy you have to wash it first, and do some preparation beforehand, but with the Bob's Red Mill kind I received it was ready to use. The easier the better, right? Here is the recipe I followed. I had everything on hand which was great.

Black Bean Quinoa Salad

Ingredients: 
1 tsp olive oil
3 tsp minced garlic
1 tbsp onion powder
3/4 cup uncooked quinoa
1 1/2 cups chicken broth
1 tsp ground cumin
1/4 tsp cayenne pepper
1 cup corn (I used canned, but you could use frozen as well)
1 can of black beans, rinsed and drained 
salt and pepper to taste
*(The original recipe also called for cilantro, but I didn't have any. I think it would add some color and make the salad look really pretty!)

Directions: Spray a saucepan well with a non stick spray and combine onion powder with olive oil and minced garlic. Heat through. Add Quinoa, chicken broth, cumin, and cayenne pepper. Bring to a boil and cover. Reduce heat to a simmer and let cook for twenty minutes. After 20 minutes add black beans, corn, salt, and pepper. Cover and let simmer for five more minutes. This salad can be served hot or cold.
The verdict. LOVED the quinoa. I loved the nutty flavor and the texture. The recipe was really really good too. So flavorful. It made a ton, and I'll be eating the leftovers this week for sure. Quinoa is awesome because it is a complete protein. It is gluten free, a great source of fiber, phosphorus, magnesium, and iron.

This recipe makes 7 servings (each 1/2 cup) and the stats are...
Awesome protein and fiber content! You really should all try this. It was SO good...almost like a play on spanish beans and rice. I am going to use the Whole wheat flour Bob's Red Mill sent me to make some of my favorite zucchini cookies, and I want to try the whey in one of my shakes. So far we're 2 for 2!



Do you like Quinoa? I can't believe this is the first time I've had it. It's DELISH! Do you believe in the 5-second rule? Or are you a food germ-a-phobe like I am? What food do you love so much that you would eat it off the floor? I think I might salvage a chocolate covered cinnamon bear...man those things are good.

You Go Girl

Happy Sunday. Sundays are definitely my day of rejuvenation. I get to sleep in. I rest from exercising. I get to go to church. I plan out my week ahead. It's glorious. I so excited to share this post with you. Becca commented on my blog a while back, which led me to her blog where I found her amazing story. She is an incredible example of someone who has set goals for herself and achieved them. Read her story and you'll definitely be reminded that we have the power within us to accomplish great things, be they great or small.


Megan: Tell us about yourself:

Becca: Hello! I’m Becca, an almost 27 year old east coast Canadian living in Montreal with my beast of a cat Snicklefritz… Aka, the Fritz. I moved to the city 7 ½ years ago because I needed a change, I was stuck in a rut with school, life, health. I was in a vicious cycle and needed out… Yes, I felt like that at only 19. Once I was on my own and creating MY life I was able to shift my focus from weight loss to a healthy lifestyle. I’m now a second year figure competitor working on getting up there in the ranks until the fun runs out.... and then I will quit my job, move to the mountains and be a full time snowboard bum.
 
Megan: What is your weight gain story?

Becca: I don’t think there really IS a story. I just always was overweight/obese/whatever you want to call it. I don’t remember a time growing up when I wasn’t “the fat kid”. Harsh, but true. In high school I began rowing competitively and thus began a bad lose/gain cycle that lasted for years and included dabbling in excessive exercise, restricted eating and binge eating while I struggled to make my weight class and train.
 
Megan: When did you realize you wanted to make a change in your lifestyle?

Becca: When I initially lost weight I loved the attention I got. I think deep down I always grew up thinking “once you get skinny you get it all”, that once I was a size 2 I’d be happy, healthy, in love, perfect job, perfect life. Um. No, not so much. After losing a very large chunk of weight I then proceeding to binge my way right back up to where I started and got stuck in a lose/gain relationship with weight for years.
Finally I decided I wanted to compete… but did I have what it takes? I hired several coaches, each one leaving me going straight back to the restrict/binge cycle I knew all too well with my self esteem in the garbage. After one particular plan had me eating next to nothing, over exercising and just plain miserable, I said enough was enough, I needed to do this for my HEALTH, not for vanity or popularity. Being “skinny” did not equal fit and healthy and I don’t know how or why, but when that clicked it really *clicked* and I began my current path to being a figure competitor, but on my terms.
 
Megan: What exactly did you change?

Becca: I stop viewing foods as “good” or “bad”. While I do count macros (protein/carbs/fat) for my competing, I don’t believe one food is better than the other. Even during prep if I want a cookie, I will work that cookie into my macros and enjoy every single bite. I don’t eliminate foods like dairy, fruit, or nut butters, I eat everything in moderation. Being able to enjoy foods normally off limits to me allowed me to avoid binging and feel satisfied with food for the first time in a very long time.

Megan: What was the hardest part about your weight loss journey?

Becca: To me the hardest part was the negative comments I got, that I’m “too skinny” now and because I do weigh/measure my food it’s restrictive and unhealthy. While I know that these comments are unfounded, it’s still hard to hear and a bit of a kick in the gut (or lack thereof… ). Letting go of the usual dieting rules is also a challenge, growing up being exposed to every diet under the sun means I know them all inside and out and there is always that nagging part of my brain that thinks that there is a “quick fix” and I need to find it… NOW.

Megan: What was the best part of your weight loss journey?

Becca: There is two answers to this question… the serious one, and the Becca one.Serious answer: I love feeling good physically and mentally. I love being able to run up the stairs and not get out of breath, to be able to get out of bed and run 5miles without thinking I’m going to keel over and die on the spot is crazy, I don’t constantly obsess over food anymore, I feel relaxed and at ease with myself and the lifestyle I’ve created for myself. Seeing myself as strong, fit and healthy and not a blob is a big perk, but I think the biggest thing is that I love ME now, and it has nothing to do with the number on the scale or the amount of plates on the side of a squat bar. Choosing to live a healthy lifestyle allowed me to choose to love me and be more than a body, I’m a personality (sometimes a bit TOO much of one) and not half bad!

The Becca Answer: I love going home and people not recognizing me and when they do they realize I’m not the girl “with the pretty face” anymore. I love fitting into skinny jeans and wearing a bikini (on the beach AND on stage). I love getting a pedicure and actually looking down and seeing my toes, not my stomach… Yeah… I know, I went there. I love running races and beating the people who used to call me fat even though I didn’t even “train” for it.
 
Megan: What is your eating/workout regimen like now?

Becca: Like I mentioned no foods are off limits to me, but I do tend to eat a lot of veggies, crock pot chicken, lean beef, greek yogurt and carbs like sweet potatoes and oats just because that’s what I love and actually crave now. I eat 6-7 times a day depending on my schedule with my two biggest meals being my pre and post workout meals to maximize my time in the gym. During the offseason I do have one cheat meal a week and enjoy it 100% guilt free.

I prefer a more traditional bodybuilding style workout plan, I lift weights 5-6 days a week, usually training my weaker body parts (shoulders and legs) twice. During the offseason my cardio is fairly easy, three 40 minute sessions per week and during prep it varies, but usually is 6 days a week with the max time I’ve ever done being 60 minutes per day.
 
Megan: What advice do you have for others who are wanting to get in shape?

Becca: Figure out what you love and do it. If you love to lift weights, do it, if you love to run, do that. Make it work for YOU. Before I settled on entering my first competition I decided to run a half marathon “because I should”, well I hated it and was miserable. I quit after three weeks of training, but when I decided to compete I was doing something I loved to do, I never miss a workout, I do the kind of cardio I enjoy and it doesn’t feel like a chore.

Also, try new foods! I was the worlds pickiest eater (I think I have a trophy in my closet somewhere) which made life hard, I thought I hated everything. It wasn’t until a friend basically forced me to start eating new foods did I realize I LOVE to eat, I love to try new foods and experiment in the kitchen. I do still hate olives, but hey, at least I tried them instead of just assuming I hated them. Adding variety and experimenting keeps things changing and exciting, which for me made a big difference in how I felt towards my food.

What a great reminder that true happiness comes when we make lifestyle changes and really seek to find the active things we love to do, and stop crash dieting! Maximize Both Your Workout Time & Your Cleanup Time

Time is precious. Everyone is busy. Whether you are working, parenting, or just living life the best way you know how; it seems that everyone has a full plate. Trying to get workouts in can be tough, and unfortunately, it seems that working out goes to the bottom of the priority list when life gets really crazy. Working out doesn't have to mean hours and hours at the gym. If you are efficient with your exercise you can be in, sweaty, and out in no time at all. Here are some great ways to maximize your workout time.

1) Become a multi-tasker. Combination movements are some of my favorite exercise because they allow you to work several muscles at once. Some of my favorites are:
- Squats with an overhead dumbbell press
- Lunges or step ups with a bicep curl
- Walking Lunges with a shoulder raise
- Plank Rows with dumbbells
- Row in a Lunge
- Plank triceps kickbacks
- upright row to a dead lift
- squats with a bicep curl

2) Super Set your workouts. Instead of doing three sets of bicep curls in a row with rest in between, alternate muscle groups and alternate between two exercises. Bicep curls, squats, bicep curls, squats, etc...you get it. If you do an upper/lower body combination or two opposing muscle groups like back and biceps you will allow one muscle group to rest while you are working the other muscle group. This is a great way to keep your heart rate up as well.

3) Go with a plan. If you start your workout with the...what should I do today...attitude, you will probably waste time. Take a day in the beginning of the week and plan out what your workout schedule is going to look like. You will be more efficient, and you will be more likely to fulfill your planned routine.

4) Make your workout HIIT. HIIT stands for high intensity interval training. What this means is you are working high intensity intervals into your workout plan instead of just keeping your heart rate at more of a steady state. This can be a great time saver if you work out in a circuit training style. Adding cardio bursts into your weights routine such as; jump squats, plyometric lunges, burpees, step ups, or mt climbers are great exercises to increase your heart rate and allow you to burn more calories. You'll sweat like CRAZY promise.

Now to the cleanup...
I love making my strawberry banana protein shake. It is easy, high in protein, refreshing, and really tasty. It actually fills me up too. One thing I hate is the cleanup afterwords. Blenders/magic bullets, cuisinarts can all be really hard to clean. BUT I have the best solution.

Easiest cleaning method EVER.

The Good Lord Loves Us, So He Gave Us Fridays. Now go bananas.

Weekends are the best. I love my job, but there is something refreshing and wonderful about the weekend, don't you think?

I have a new recipe for you...and I think your gonna LOVE it. If you don't...you're crazy. A few years back I went to a dietitian who gave me some awesome healthy, recipes. This low fat banana bread was one of them. I've made a few tweaks here and there, and man is it good. I have been thinking about this all week, and due to my cut out the crap regimen I'm following I'll post this in hopes that one of you will make it and enjoy it proxy for me. :) I'm pretty sure if I made it right now I'd eat the entire thing, and I don't know if that was part of the regimen...I'm a firm believer in moderation in all things, so I don't think a treat here and there is bad by any means. I just know myself far too well.

Low Fat Banana Bread
2 egg whites
¼ cup non-fat sour cream
2 ripe bananas (mashed)
1 ½ cup whole wheat flour
¼ cup fat free buttermilk
½ cup sugar
1 tsp cinnamon
1 ½ tsp baking powder
½ tsp baking soda
¼ cup chocolate chips
mix wet ingredients first, then add dry ingredients
Bake at 350 for 40 mins. Makes one loaf. 16 servings

 Tell me that isn't easy and fantastic. Now one of you promise to make it and send me delicious details of every melting chocolatey bite. K??

Aren't those shoes smokin'?? I already worked out today, but I'm tempted to go run again to try them out! When I started my blog a few years ago I started it for the purpose of giving my clients something to reference when they needed tips and ideas on how to make their lifestyle full of healthy habits. I wanted to show them a brief glimpse into how I lived my life day to day, so they could see I was practicing what I was preaching. It isn't until recently that I've really connected with other bloggers, and found that there are so many of you out there that are absolutely incredible, full of inspiration, and brimming with good ideas. Thank you for being so great! I appreciate each and every one of you!

What do you call a fish with no eyes?

Fsh. I have to say THANK YOU for all of your steel cut oats wisdom. Thank you for your tips and your recipes. Seriously, you guys are the bomb. Apparently whatever blogs I've read in the past about putting protein in oatmeal were completely fabricated because ALL of you told me you hated it. Detested it actually. I'm going to work on this one, and when I come out with the best steel cut oats recipe known to man that is not a breakfast FAIL, I'll gladly share it with you. I can promise you that it will be sans protein powder, and NOT cooked in the microwave as you so wisely advised me. I am also glad to hear that all of you seem to love breakfast as much as I do. It is what gets me out of bed in the morning.

Upon returning back to work on Monday all of my coworkers and I were feeling a little "over-Christmas-ed," if you will. As I've mentioned earlier this week, I was rip-roarin' ready to get back into my routine and get in gear. All of the staff at Elevate, my place of work, was feeling the same. So, we decided that we should engage in a little competition as to who could lose the most weight in 4 weeks and then keep it off for 6 weeks. (This is so people don't just attempt to starve themselves to win.) 
Now, there are a few things you must know...

1) Elevate...my place of work...is a triathlon training gym. We also do physical therapy, chiropractics, basic weight loss coaching, personal training, nutrition counseling...etc. I am a personal trainer and nutrition coach there. Best. Job. Ever.
2) My coworkers are HARDCORE. We're talking marathon runners, iron men, personal trainers, athletes...etc. The owner of Elevate is planning to run a 100 miler in UT in September. These people aren't wussy by any means. 
3) They know what they are doing. This competition isn't between a bunch of people who, "might go for a run tomorrow," which makes the competition that much more exciting. I know everyone is going to be intense about it. Fun huh??

This is the reasoning behind all of my talk of wanting to get my protein percentages up. I'm shooting for 25-30% of my calories coming from protein, 50-55% from carbohydrates, and 20-25% coming from fat. I've been keeping very strict track of my calories, and putting in some serious time at the gym. I'm not going to lie...it feels SO good. I forget how much I love to be in control of my food...I'm totally weird, I know. I have some specific goals I want to meet, and win or lose, this is a GREAT way to help get me there. 

You should know that I HATE fish. I know it's an amazing source of lean protein...I tell my clients this all the time. I just can't do it. I hate the taste, the texture, and THE SMELL. For some crazy reason I decided to give Tuna a try today. (My mom is going to fall out of her chair when she reads this.) You know I'm serious about my goals when Tuna comes into the picture.
I had a La Tortilla Factory Wrap, with spinach and tuna mixed with a little bit of light miracle whip. I'm usually not a fan of mayo or miracle whip, but something had to be done to disguise the tuna. 190 calories and 26 grams of protein in this bad boy.
 I ate it with an extremely large side of steamed veggies over spinach drizzled with fat-free honey dijon dressing. Veggies are extremely low in calories and really filling, so you can eat a lot of them. Plus, I just love them.

The verdict: I didn't die! I had to not think about what I was eating, and certainly not breathe through my nose, but I actually didn't mind it.

So, tell me...What is your best, "high protein meal?" I know some of you have said you struggle getting protein in like I do, so I can't wait to hear all of your great ideas. Is your workplace/family having any sort of weight loss competition? Do you track your calories? Although it can be super annoying, and it's not for everyone, it's the best way for me to stay on top of where I want to be!

Breakfast FAIL. I need your help.

I was super excited for breakfast this morning. I was FINALLY going to make some steel cut oats. I've been wanting to make them for a while, and because I'm always running out the door I haven't had time. So today was the day...

Mistake #1: I didn't know the right time/water ratio. My computer was upstairs. I was hungry and lazy. I didn't think it would be much different than my slow cook oats.
It went a little something like this...1/4 cup steel cut oats...3/4 cup water...microwave 5 mins...stir. Nothing. microwave for 3 more mins...stir. (I knew they took longer to make so I wasn't worried at this point.) Microwave 2 more mins...looking strange...add some more water. This went on for a few more minutes, and they finally started to resemble something edible.

Mistake #2: Adding Whey Protein Powder. I have been really focusing on getting my protein percentage up around 25-30 percent this week, so I thought I'd add some protein powder. I have heard of other people doing it and they rave about it. THEY LIED. 

Mix in one scoop of whey protein powder...add a little more water...stir...microwave for 2 more minutes. Looking like oatmeal..YAY! Microwave one more minute, stir. Taste....Absolutely awful. 

In attempt to save said breakfast I added: cinnamon, honey, a little bit of sugar free maple syrup. Fail. Fail. Fail. Then finally some PB...isn't that supposed to make everything taste better. This is what it looked like.

 It looks harmless enough, right? (I accidentally typed "harmful" the first time...subconscious talking? I think so.)
 It tasted like what that baby rice cereal smells like. It was terrible. However, in an attempt to get about 25 grams of protein I was going to muscle my way through it.


Mistake #3: Trying to eat this breakfast.
Not possible. I'm telling you it was bad. 

So this is where you come in. Please help...Do you know a great way to make steel cut oats? Do you only use slow cook oats or quick oats? I love slow cook...that is my usual. Have you ever added protein powder into your oatmeal, and had it taste good? I would love to make my oatmeal protein packed, but I'm not going the same route I went today EVER again. I know you are all the smartest...teach me.
